These other products are typically made from animals fed on grain-based diets, often including barley, wheat, and oats. In addition to not benefiting from an acorn-rich diet, they do not enjoy the unique way of life found in the Dehesa of Extremadura: freedom to roam, natural surroundings, and a slower pace of life.

This lifestyle is one of the key reasons we are able to produce such exceptional ham. However, not all Iberian pigs are the same. In fact, there are different classifications based on the percentage of Iberian breed: 50% Iberian (with one Iberian parent, usually the mother), 75% Iberian (from a 100% Iberian mother and a 50% Iberian father), and other variations.

Then there is the 100% Iberian pig, descended from two pure Iberian parents and representing the breed in its most authentic form.
