A Commitment to Animal Welfare

Twenty-one thousand hectares. Not one more, not one less.

We are privileged to steward over 21,000 hectares in the heart of the Extremaduran dehesa.

Here, each of our Iberian pigs enjoys between two and three hectares of natural pastureland, roaming freely in an exceptional environment and feeding on the acorns of our holm oaks and cork oaks.

This unique ecosystem allows our animals to develop naturally, ensuring outstanding welfare and producing meat of extraordinary quality.

This philosophy defines everything we do.

We supervise every stage of the process, from breeding and feeding to the montanera season and final curing. One of our most distinctive advantages is our own feed mill, where we produce high-quality natural feed made from carefully selected cereals.

This ensures our animals are healthy, strong, and perfectly prepared before transitioning to their exclusive diet of acorns and wild grasses during the montanera season in the dehesa.

By controlling every step, we guarantee consistency, traceability, and exceptional quality.

A Six-Year Journey Towards Perfection

True excellence cannot be rushed.

From breeding and feeding to the montanera period—the free-range acorn-feeding phase—and the final curing process, nearly six years pass before our products reach the market.

Our hams undergo more than 40 months of natural curing, while our shoulder hams mature for over 30 months.

This extraordinary dedication to time transforms every piece into a genuine gastronomic treasure.

The Highest Quality Standards

We are proud members of the PDO Dehesa de Extremadura, widely recognised as one of the most demanding Protected Designations of Origin in Spain.

Every stage of production is audited and supervised by technicians from the Regulatory Council, ensuring complete traceability and strict compliance with rigorous quality standards. Only products that successfully pass every inspection receive the prestigious PDO Dehesa de Extremadura seal.

Unlike many other production systems, mass production has no place here. Quality always takes precedence over quantity, resulting in limited production volumes and truly exceptional products.

An Extraordinary Natural Environment. The Extremaduran dehesa extends across more than one million hectares, making it one of the richest and best-preserved ecosystems in Europe. It's abundance of holm oaks and cork oaks, combined with favourable climatic conditions and generous grazing areas per animal, creates the ideal environment for natural acorn feeding and slow development.
