Frequently Asked Questions About Our Iberian Cured Meats

Which Iberian cured meats do you offer?

In addition to our renowned Iberian hams and shoulder hams, we offer a carefully selected range of premium Iberian cured meats, including:

  • 100% Iberian Acorn-Fed Loin (Lomo)
  • Iberian Lomito
  • Iberian Cular Chorizo
  • Iberian Cular Salchichón
  • Iberian Sobrasada

All crafted from the finest Iberian pigs raised in the dehesas of Extremadura.

What is the difference between Lomo and Lomito?

Lomo comes from the loin of the Iberian pig and is characterised by its larger size, lean texture, and elegant flavour.

Lomito is produced from a smaller and more exclusive cut located near the loin. It contains a higher degree of marbling, resulting in a more tender texture and a richer flavour profile.

What is the difference between Cular and Vela?

The distinction refers to the casing and shape used during curing.

  • Cular products are cured in the natural large intestine, resulting in a wider diameter and longer maturation period.
  • Vela products are thinner and cured more quickly, producing a slightly different texture and flavour intensity.
What makes Extrem cured meats so special?

Our products originate from 100% Iberian pigs raised in freedom in the dehesas of Extremadura, fed naturally on acorns and pasture during the montanera season, and crafted using traditional curing methods that preserve their authenticity and exceptional flavour.

What is the difference between Iberian Chorizo and Salchichón?

While both are traditional cured sausages made from premium Iberian pork:

  • Chorizo is seasoned with paprika, giving it its distinctive red colour and rich, smoky flavour.
  • Salchichón is seasoned primarily with black pepper and selected spices, offering a more delicate and subtle flavour profile.
What makes our Sobrasada unique?

Our Iberian Sobrasada is crafted from premium acorn-fed Iberian pork and inspired by traditional recipes. Its creamy texture, balanced flavour, and exceptional quality make it one of the most distinctive products in our range.

Frequently Asked Questions About Iberian Ham & Shoulder Ham

How should Iberian Ham and Shoulder Ham be stored? What about sliced products?

Whole pieces should be stored in a cool, dry place away from direct sunlight.

Vacuum-packed sliced products should be kept refrigerated and removed from refrigeration approximately 30 minutes before serving to allow their full flavour and aroma to develop.

What are the small white crystals that sometimes appear in Iberian ham?

These small white crystals are naturally occurring tyrosine crystals, formed during the curing process. They are considered a sign of a slow, traditional maturation and excellent product quality.

Which is better: Ham or Shoulder Ham?

Both offer exceptional quality but different experiences:

  • Ham (Jamón) provides larger slices, a more refined flavour profile, and a longer curing period.
  • Shoulder Ham (Paleta) offers a more intense flavour and greater marbling.

The choice ultimately depends on personal preference.

Do you offer organic Iberian products?

Yes. We produce selected organic Iberian products from certified organic farms and dehesas that comply with strict European organic farming regulations.

What makes our organic products so special?

Our organic Iberian pigs are raised in freedom on certified organic dehesas and are fed organic feed free from genetically modified ingredients, antibiotics, and unnecessary additives.

During the montanera season, they feed naturally on acorns and pasture, consuming more than 1,000 kg of acorns per animal. Organic dehesas must also comply with rigorous environmental and livestock management standards, ensuring that all animals and land are certified organic.

The resulting products are crafted using organic agricultural ingredients and strict limitations on additives, processing aids, and non-organic components. Production takes place on dedicated lines separated in time and space from conventional products, ensuring full compliance with organic certification standards.

The result is a range of products that combine exceptional flavour, sustainability, animal welfare, and respect for traditional Iberian craftsmanship.
