Each Iberian acorn shoulder has been prepared taking care of every detail from beginning to end: from the selection of the 100% Iberian breed to the minimum cure of 24 months in our dryer, through its diet based on acorns and natural grasses in the Dehesa de Extremadura, cradle of the best Iberian.

Exactly! "Paletillas" are the pig's front legs. 

At first glance, you will see that the shoulder weighs less than the ham. The bone of the shoulder is larger, and therefore there's less meat; that's why its price is lower. However, in Spain - and around the world - there are many fans of shoulder hams because of their exclusive taste.

As the meat on the shoulder ham is closer to the bone, its taste is more intense. It's ideal for lovers of strong, cured flavours.

Don't try to work out whether the ham or the shoulder ham is better. Accept that they are different and enjoy them equally. 

If you choose EXTREM PURO EXTREMADURA hand-cut shoulder ham, our master carver will take charge of preparing the piece for you at the same time that you place the order.

And the presentation will be on a par with its cutting and taste.
